Peanut Chutney


IngredientQuantity
Peanuts1/4 cup
Coriander Seeds1 1/2 tsp
Cumin Seeds1/2 tsp
Pepper 1/2 tsp
Urad dal1/2 tsp
Red Chilli1
Onion2 tblsp
Tamarind Paste3/4 tsp
Saltto taste
Oil2 tsp

Cooking Steps

  • Roast peanuts till they crackle.To remove skin,gently rub with palms.
  • Heat oil,add red chilli and onion and fry till onion changes brown and set aside.
                
  • Now roast coriander seeds,cumin seeds,pepper,urad dal till flavour wafts out.
                               .
  • Add tamarind paste,salt and little water and grind.

  • Yummy with rice and ghee,nice combo for dosa.
  • Removing skin is optional.It varies the colour of the chutney.
  • Coconut can be added if desired.
  • Remove the red chillies else it may get burnt.
  • Spices may be roasted one by one to avoid burning.

Egg Fried Rice

Basmati rice 1/2 cup(cooked)
Carrot,Beans,Peas1/2 cup

Pepper Powder1/2 tsp

Oil2 tsp

Cooking Steps

  • Heat oil in a pan,add all the veggies,sprinkle salt and pepper and saute well for a few minutes.
             
  • Now add cooked rice and give it a nice stir.
                
  • Now break in the eggs and once the white settles down,mix it well till the eggs are done.Season with salt and pepper if needed.

  • Spring onions can be added for that extra punch.
  • An easy way of including all veggies for kids.

Baby Corn Golden Fry


Ingredients

Baby Corn10
Plain Flour1 tblsp
Rice Flour1 tblsp
Chilli Powder1/2 tsp
Bicarb of Soda
a pinch
Saltto taste
Oil to deep fry

Cooking Steps

  • Cut baby corn into halves,sprinkle salt and keep aside.Meanwhile heat oil for deep frying.
           
  • Mix plain flour,rice flour,salt,chilli powder and make a batter.
             
       
  • Dip the corns in the batter and drop them in hot oil and fry till golden brown.Drain on a paper towel and serve with any chutney or sauce.

Vermicelli Biriyani

Ingredients

Preparation time:20 mins
Serves:2 people
Cooking time:20 mins

Cooking Steps

  • Boil water in a vessel and cook vermicelli till it is tender.Drain and keep it aside.
            
  • Heat oil in a pan,add cardamom,cinnamon,cloves,green chilli,onion,ginger garlic paste and fry till raw smell goes off.
               
           
  • Now add all the chopped vegetables,turmeric powder and saute for few minutes.Add salt,add little water,cover with lid and cook till the vegetables are done.
  • Then add cooked vermicelli and give it a mix.Switch off gas and leave it on for five minutes.Garnish with cashews roasted in ghee and serve.

Bottle Gourd Stir Fry/Suraikai Poriyal

  • Roast peanuts and powder it.
               
                
  • Heat oil in a pan,splutter mustard seeds,add curry leaves,onion,finely chopped bottle gourd/dudhi,saute for a while.Add salt,chilli powder and water,cover with lid and cook.Once cooked,add peanut powder,give it a stir and serve.

Spinach Pulao


Ingredients

Basmati rice1 cup

Cumin seeds1 tsp
Aniseed1/2 tsp

Cooking Steps

  • Cook spinach along with ginger,garlic,green chilli,cumin seeds for three minutes and blend them. Meanwhile wash and soak rice.
                 
  • Melt ghee in a pressure cooker,add aniseed,clove,cardamom,cinnamon and onion and saute for few minutes.
                  

  • Now add rice,salt and spinach puree.Add 1 1/2 cups of water and cover with lid.Simmer for 8 to 10 minutes.

  • A quick pulao rich in iron.
  • Ideal for lunch.Tastes good with roast potatoes.

Nutri Laddu


Ingredients

Roasted Gram1 tblsp
Cashew,Badam,Pistafew each(4-6)
Grated Coconut1 tblsp
Grated Jaggery1 tblsp
Ghee1 tsp

Cooking Steps

  • Dry roast the peanuts and let them cool for a while.Now gently rub them with your palms and the skin will come off.

  • Heat ghee in a pan and roast cashew,badam and pista.Add coconut and give it a toss too in ghee.
                        

  • Add grated jaggery to this mixture and powder them all together.
                             

  • Take a small portion and shape into laddoos.

Bread Omelette

Cooking Steps

  • Break the eggs into a bowl and beat them slightly.Add sugar,milk and mix well.

  • Remove the edges and cut the bread slices into desired shape.Dip the bread slices in the egg mixture.
                  

  • Heat a tawa /skillet,apply ghee and place the bread slices coated with egg mixture.Toast on both sides till golden brown.

Poori Side Dish


Ingredients

Roasted Gram Powder1 tblsp

Cooking Steps

  • Heat oil in a pan,splutter mustard seeds,add onion,green chilli and curry leaves and saute for a while and then add ginger garlic paste and fry till the raw smell goes off.
  • Now add turmeric powder,chopped tomatoes and fry till tomatoes become mushy.
  • Mix roasted gram powder in water and pour into this.Bring it to a boil and finally add mashed potato and salt.

  • Powder roasted gram(pottu kadalai/daria dal)and store in an air tight container and use whenever needed.
  • Prick potatoes with a fork and microwave for 5 minutes.
