Paneer Puri

 
Prep Time:15 m     Cook Time:20 m
Makes:15 - 20

Ingredients

 Paneer         - 150 g
Wheat Flour - 1 & 1/2 cup
Salt               - to taste
Oil                - to deep fry

Method

  • Grate the paneer and knead into a soft dough with wheat flour,salt and water.Make small balls,roll into puris and deep fry in hot oil.Serve with any gravy or side dish.

    • Kneading paneer well with the flour will give soft and puffy puris.The moisture in the paneer will be enough to avoid sticking while rolling.If needed grease the ball with a drop of oil.

Gobi Paratha

Stuffed parathas are a boon when nothing comes into my mind  about side dishes.And this gobi paratha is really so yummy which goes well with some curd and onions.
Prep Time:20 m     Cook Time:15 m
Makes:6

Ingredients

Wheat Flour       - 1 cup
Cauliflower         - 1 cup(grated)
Chilli Powder      - 1/2 tsp
Turmeric Powder -1/4 tsp
Cumin Powder    - 1/2 tsp
Salt                    - as required
Ghee/Oil            - to grease

Method

  • Add little salt and water to the flour and knead into a soft dough and set aside.Meanwhile add the cauliflower florets to salted boiling water for five minutes and drain.Grate this using a fine grater.
       
  • Squeeze out the excess water from the cauliflower and add the spice powders,salt and mix them well.
       
  • Now divide the dough into six portions.Take one portion and roll it slightly.Place the stuffing inside which is almost of the same size as the dough.Cover it nicely and pinch off any excess dough.Now roll this stuffed paratha gently by dusting generous amounts of flour as the cauliflower is watery since blanched in water.Place this on a hot tawa.Turn the other side and then apply ghee or oil.Cook both sides and serve with spiced curd.

  • Add little ghee to the flour while kneading if desired.
  • Dust in flour so that even if the cauliflower is leaving out water it won't stick to the rolling pin.
  • Ideal for lunch boxes and easy to pack while travelling.
  • Add chilli powder and cumin powder to the curd.

Channa Puri

Prep Time:20 m+soaking time   Cook Time:20 m
Serves:3

Ingredients

Channa/chickpeas - 1/2 cup
Wheat Flour          - 1&1/4 cup
Salt                        - to taste
Oil                         - to deep fry
Ghee                     - 2 tsp

Method

  • Soak channa dal for a minimum of six hours and grind to a paste.
                                         
       
  • Take the channa paste in a mixing bowl and add salt to this and mix well.Now add the flour little by little and knead into a smooth dough.Add ghee to this,knead and set aside.
       
  • Make small balls and roll into puris.Meanwhile heat oil in a kadai.Once the oil is hot drop the puris gently in hot oil and fry both sides.Serve with any favourite side dish.

  • Soft soft puris with a different taste.
  • The softness is retained for a long time.
  • Add more flour if required.Grease with a drop of ghee while rolling the puris if it is sticky.
  • Drain the excess water and then grind the channa.

Potato Cheese Paratha

Prep Time:10 m      Cook Time:15 m
Makes:6

Ingredients

Wheat Flour - 1 cup
Potato           - 1(boiled & mashed)
Cheese          - 2 tblsp
Salt               - a pinch
Ghee             - to brush

Method

  • Mix all ingredients except ghee in a mixing bowl.It will become crumbly.
       
  • Add water little by little and knead into a soft dough.Divide this into six equal portions.
       
  • Heat a tawa.Meanwhile take a portion of the dough and spread into a paratha with a rolling pin on a flour dusted work surface.Once the tawa is hot cook the parathas on both sides until golden spots appear.Brush little ghee and serve with any favourite side dish.
