Mutton Keema Curry

Prep Time:15 m      Cook Time:20 m
Serves:3

Ingredients

Mutton Keema        - 300 g
Onion                      - 1
Tomato                    - 2
Ginger Garlic Paste - 1 tsp
Curry Leaves           - 2 sprigs
Coriander Leaves    - 1/4 cup
Coriander Powder   - 2 tsp
Turmeric Powder    - 1/4 tsp
Chilli Powder          - 3/4 tsp
Cumin Powder        - 1/2 tsp
Mustard Seeds        - 1/4 tsp
Aniseed                   - 1/2 tsp
Khus Khus              - 1/4 tsp
Salt                         - to taste
Oil                          - 2 tsp

Method

  • Heat oil in a pressure pan,splutter mustard seeds,aniseed,khus khus,curry leaves,onion and saute till onion becomes translucent.Add ginger garlic paste and saute till raw smell leaves.Now add keema and saute for a while.
       
  • Now add chopped tomatoes and saute till tomatoes become mushy and then add all the spice powders and salt.Close the lid and pressure cook for four whistles.Once pressure is released add finely chopped coriander leaves and serve with idli, dosa or rice.

  • Fresh cream can be added for a rich creamy gravy.
  • Adding more coriander leaves gives a different flavour and taste to this keema gravy.
  • Tastes excellent with idli.
  • Keema form is easier for kids to eat and especially for toddlers.

Tofu Masala

Ingredients

Tofu                      - 200 g
Onion                    - 1
Tomato                 - 2
Chilli Powder        - 1 tsp
Coriander Powder - 2 tsp
Cumin Powder      - 1 tsp
Garam Masala       - 1/4 tsp
Salt                        - to taste
Oil                         - 2 tsp

Method

  • Heat a teaspoon of oil and fry roughly chopped onions and tomatoes till the onions turn golden brown and tomatoes become mushy.Let it cool and blend into a paste.
       
  • Place the onion tomato paste in a pan and add all the spice powders and give it a mix.Add little water if needed.
       
  • Meanwhile in a frying pan add a teaspoon of oil and fry the tofu cut into small pieces till they are slightly brown in colour.Add it to the gravy and serve with dosa,roti..
       

Little Words

  • Tofu is a very good alternate for paneer and protein rich too.
  • While frying tofu be gentle else it will crumble.

Peanut Chutney


IngredientQuantity
Peanuts1/4 cup
Coriander Seeds1 1/2 tsp
Cumin Seeds1/2 tsp
Pepper 1/2 tsp
Urad dal1/2 tsp
Red Chilli1
Onion2 tblsp
Tamarind Paste3/4 tsp
Saltto taste
Oil2 tsp

Cooking Steps

  • Roast peanuts till they crackle.To remove skin,gently rub with palms.
  • Heat oil,add red chilli and onion and fry till onion changes brown and set aside.
                
  • Now roast coriander seeds,cumin seeds,pepper,urad dal till flavour wafts out.
                               .
  • Add tamarind paste,salt and little water and grind.
           
Little words
  • Yummy with rice and ghee,nice combo for dosa.
  • Removing skin is optional.It varies the colour of the chutney.
  • Coconut can be added if desired.
  • Remove the red chillies else it may get burnt.
  • Spices may be roasted one by one to avoid burning.

Poori Side Dish


Ingredients

Onion1(thinly sliced)
Ginger Garlic Paste1 tblsp
Green Chilli2
Curry Leavesfew
Turmeric Powder1/8tsp
Roasted Gram Powder1 tblsp
Oil2 tsp
Mustard Seedsto splutter
Saltto taste

Cooking Steps

  • Heat oil in a pan,splutter mustard seeds,add onion,green chilli and curry leaves and saute for a while and then add ginger garlic paste and fry till the raw smell goes off.
  • Now add turmeric powder,chopped tomatoes and fry till tomatoes become mushy.
  • Mix roasted gram powder in water and pour into this.Bring it to a boil and finally add mashed potato and salt.
Little words
  • Powder roasted gram(pottu kadalai/daria dal)and store in an air tight container and use whenever needed.
  • Prick potatoes with a fork and microwave for 5 minutes.
