Veggie Nest


Ingredients

Carrot,Peas,Beans,Potato - 1 cup(each 1/4 cup)
Onion                               - 1/4 cup
Mint & Coriander Leaves  - 2 tblsp
Green Chilli                      - 1
Ginger Garlic Paste          - 1 tsp
Garam Masala                  - 1/2 tsp
Corn Flour                       - 1 tblsp
Bread Crumbs                 - 2 tblsp
Vermicelli                        - 1/4 cup
Salt                                 - to taste
Oil                                  - to deep fry

Method

  • Cook the chopped vegetables with salt.Add all other ingredients excluding oil and mix well.Divide into small portions.
               
       

  • Make it oblong and roll it in vermicelli and deep fry till golden brown turning gently.

  • An appealing snack for kids.Serve with sauce or just plain.
  • Tastes best when hot.
  • Let the flame be medium.

Tomato Kuruma

Ingredients

Tomato               - 3
Onion                  - 1 
Chilli Powder       - 3/4 tsp
Turmeric Powder - 1/4 tsp
Mustard Seeds     - to splutter
Curry Leaves       - few
Coriander Leaves - 1 tblsp 
Salt                      - to taste 
Oil                       - 2 tsp
To Grind
Coconut              - 1/4 cup 
Fried Gram          -  2 tblsp
Aniseed               - 3/4 tsp
Khus Khus          - 1/2 tsp
Clove                  - 2
Cinnamon            - a small piece

Method

  • Add required water to the ingredients to grind and grind it to a paste.
     
  • Heat oil in a pan,splutter mustard seeds,add curry leaves,onion and saute till onion becomes soft.Add the chopped tomatoes and saute.
        
  • Now add turmeric powder,chilli powder,salt and saute for a while till tomatoes are mushy.Add the coconut paste to this and adjust water level.Bring this to a boil,garnish with coriander leaves and serve.

  • A great combo for idli and especially dosa.(I always eat extra dosas with this kuruma).

Jeera Pepper Potato Fry

Ingredients

Potato               -  3
Jeera Powder    -  1/2 tsp
Pepper Powder  - 1/2 tsp
Salt                   - to taste
Oil                    - 1 tblsp
Coriander leaves- to garnish

Method

  • Cut potato into small cubes and cook in a pan of salted boiling water for ten minutes.Drain and add pepper powder and mix.
        
  • Heat oil in a shallow frying pan and add the poatao cubes.Sprinkle jeera powder and toss it gently.
        
  • Fry this over medium flame tossing gently till golden brown on all sides.Garnish with coriander leaves and serve.
        

Little Words

  • Do not overcook the potatoes.It may get mushy.
  • Sprinkle little more salt while frying if needed.
  • Nice combo with sambhar,rasam,curd...
  • Roast a teaspoon of jeera and grind it to fine powder to get fresh powder.

Spinach Sweetcorn Fritters/Spinach Corn Vadai

Ingredients

Channa dal          -  1/2 cup
Sweetcorn           -  1/2 cup
Green Chilli          -  1
Onion                  - 1
Ginger                 - 1"piece
Spinach                - 1/2 cup
Coriander Leaves - 1/4 cup
Curry Leaves       - few
Aniseed               - 1/2 tsp
Khus Khus          - 1/4 tsp
Salt                     - to taste
Oil                      - to deep fry

Method

  • Soak channa dal for half an hour and grind it along with aniseed,khus khus,ginger,chilli,curry leaves and salt.
        
  • Add all other ingredients and mix well.Make small balls,flatten gently between palms and deep fry in hot oil till golden brown.

  • An excellent teatime snack crunchy outside and soft inside.
  • I added one tablespoon of gramflour since the mixture was a little watery after adding greens.
  • You can use either fresh or frozen corn.
  • Yellow split peas can be used instead of channa dal.

Coleslaw

 Ingredients

Cabbage          - 1/4 cup
Carrot              - 1/4 cup
Mayonnaise      - 1 tblsp
Yoghurt            - 2 tblsp
Raisins              - 1 tblsp
Peanuts             - 1 tblsp(roasted)
Honey               - 1 tblsp
Onion                - 1 tblsp(optional)
Pepper powder - to taste

Method

  • Mix all the ingredients together in a bowl and serve.
               
        

Little Words

  • A healthy salad.Kids may not like this but keep trying.Add more raisins and peanuts to make it appealing for kids.

Aloo Channa

Ingredients

Chickpeas           -  1/2 cup(soaked overnight or for 6 hrs)
Potato                 -  1
Onion                  -  1
Curry Leaves       - few
Mustard Seeds     - to splutter
Coriander Leaves -  to garnish
Chilli Powder        - 1/2 tsp
Salt                      - to taste
Oil                       - 2 tsp

Method

  • Pressure cook chickpeas and potato for two whistles with little salt.
  • Heat oil in a pan,splutter mustard seeds,add onion,cuury leaves and fry till onion becomes translucent.Add chilli powder,little salt and sprinkle water (to avoid burning).
       
  • Now add the cooked chickpeas and potato,give it a mix,garnish with coriander leaves and serve.

  • If you want to have chunks of potato then add it to onions and let it cook and then add cooked chickpeas.
  • Or boil potatoes separately and add it .
  • A healthy snack for kids.
  • This can be made like a chaat too.
  • Other masalas can be added to make spicy masala aloo channa.

Salmon Fish Bites

Ingredients

Salmon  Fillets       -  2
Tomato Ketchup    -  1 tblsp
Chilli Powder         -  3/4 tsp
Ginger Garlic Paste -  1 tblsp
Coriander Powder -  1 tblsp
Cumin Powder      -  1/2 tsp
Lemon Juice          -  1 tblsp
Salt                       - to taste
Oil                        - to shallow fry

Method

  • Mix tomato ketchup,chilli powder,ginger garlic paste,coriander powder,cumin powder,salt and lemon juice.
         
  • Cut the fish into pieces.You can use any desired variety.
       
  • Apply the masala over the fish pieces and shallow fry till golden brown on both sides.
                 
        
  • Squeeze in some lime juice and serve with onion rings.
