Araithu Vaitha Sambhar

Toor Dal3/4 cup
Onion2 tblsp
Tomato1
Garlic4 cloves
Coriander Seeds1 tblsp
Cumin Seeds1 tsp
Pepper1 tsp
Urad Dal1 tsp
Channa dal1 tsp
Red Chilli3
Grated Coconut1 tblsp
Tamarind paste3/4 tsp
Asafoetida/Hinga pinch
Turmeric Powder1/4 tsp
Curry Leavesfew
Mustard Seedsto splutter
Castor Oil1 tsp
Saltto taste
Oil2 tsp

Method

  • Soak toor dal for atleast twenty minutes and pressure cook adding garlic cloves,castor oil and turmeric powder.
  • Dry roast coriander,cumin,pepper,red chilli,channa dal,urid dal,coconut and grind them into a slightly coarse powder. 
  • Heat oil in a pan,splutter mustard seeds,add curry leaves,asafoetida,onion,tomato and saute for a while.
  • Now add little water and powdered spices.Add tamarind paste to this and cook until raw smell of spices goes off.
       
  • Lastly add cooked toor dal and add salt and cook for ten more minutes and transfer to a serving bowl.
       
Little words

  • Garnish with coriander leaves if desired.
  • While dry roasting a teaspoon of toor dal can also be added.
  • This sambhar is a nice combo for idli,dosa.
