Stuffed Capsicum

Prep Time:15 m     Cook Time:25 m
Servings:3

Ingredients

Capsicum            - 4
Mushroom          - 100 g
Onion                 - 1
Paneer                - 100 g
Chilli Powder      - 1/4 tsp
Cumin Powder     - 1/4 tsp
Coriander Leaves - 1 tblsp
Cheese                - 1/4 cup
Salt                     - to taste
Oil                      - 1 tblsp

Method

  • Heat oil in a pan,add chopped onions,little salt and saute till onion becomes soft.Now add the chopped mushrooms and saute for a while.
       
  • Now add the chopped capsicum,salt,cumin powder and chilli powder.Toss them all and add sprinkle little water if needed.Add the paneer pieces and toss them all together.Sprinkle coriander leaves and transfer to another bowl and set aside.
                               
       
  • Rinse the pan and heat a teaspoon of oil.Cut the top portion of capsicum and remove the seeds inside.Now this would look like a cup.Place them in the pan and turn all the sides for about two minutes.
                                    
       
  • Now stuff the capsicum cups with the mushroom and paneer and top them with cheese.Cover with a lid and cook on medium flame until the cheese has melted.Serve hot.

  • Adding chopped capsicum in the stuffing is optional.

Crunchy Sandwich


Prep Time:5 m       Cook Time:10 m
Makes:2

Ingredients

Bread Slices - 4
Carrot           - 1(grated)
Capsicum     - 1
Onion           - 1/2
Ghee/Butter - to brush

Method

  • Grate the carrot and chop the capsicum finely.Slice the onion horizontally and separate them into rings or use as such as desired.Heat a tawa.Take a slice of bread and spread carrot over it.Top with capsicum and onion.Cover with another slice and cook both sides till golden brushing little ghee or butter.
                                    
                                          
       
  • Cut them into halves and serve with any sauce.

  • A simple sandwich ideal for breakfast or brunch.
  • Capsicum and carrrots give a sweet and spicy taste together.

Broccoli Carrot and Capsicum Stir Fry


Prep Time:5 m        Cook Time:15 m
Serves:3

Ingredients

Broccoli          - 1 small flower
Carrot              - 2
Capsicum         - 1
Pepper Powder - 1/2 tsp(optional)
Salt                   - to taste
Oil                    - 2 tsp

Method

  • Bring a pan of salted water to boil.Add the broccoli florets and remove with a slotted spoon after five minutes.Set this aside.In the same pan add carrot cut into strips and remove after five minutes.
                        
  • Discard the water and give it a rinse.Heat oil in the pan and saute the capsicum pieces.Then add blanched veggies to this.Sprinkle pepper powder and salt to taste.Give it a toss and serve with steamed rice.

Capsicum Egg Masala

Prep Time: 20 m     Cook Time:20 m
Serves:2

Ingredients

Capsicum            - 2
Onion                  - 1
Tomato                - 2
Curry Leaves       - a sprig
Mustard Seeds     - to splutter
Turmeric Powder - a pinch
Salt                       - to taste
Oil                        - 2 tsp
Egg                       - 2
Fresh Cream         - 2 tbl sp(optional)

Method

  • Heat oil in a pan,splutter mustard seeds,add onion,curry leaves,little salt and saute till onion becomes soft.Add finely chopped tomatoes,turmeric powder and let it cook for ten minutes.
       
  • Meanwhile boil eggs with little salt.Heat another pan and saute chopped capsicum and saute well.
       
  • Place half of the capsicum in a blender and blend it. Add the capsicum puree and the remaining capsicum to the onion tomato gravy.Add salt and the boiled eggs cut into halves .Let it cook for further five to ten minutes.Drizzle fresh cream on top and serve with chappathis.

  • I haven't added chillies and the capsicum gives a mild spicy taste.
  • Adding cream is optional.

Crunchy Baby Corn Stir Fry

Prep Time:15 m          
Cook Time:15 m
Serves:2

Ingredients

Baby Corn       - 200 g
Capsicum         - 1 each
(red and green)
Onion               - 1
Oil                    - 2 tsp
Salt                   - to taste
Pepper Powder - to taste
Lemon Juice     - 2 tsp

Method

  • Wash baby corn and pressure cook for one whistle with little salt.Meanwhile chop onion and capsicum into small cubes.
  • Heat oil,add onions and saute for a while.Add capsicum and saute for few minutes and add salt and pepper.Now add the cooked baby corn cut into one inch pieces and toss them well.Finally squeeze in some lime juice and serve.

  • Goes well with fried rice and other rice varieties too.
  • Scrambled egg can also be added to this for a variation.
  • Crunchy colourful stir fried vegetables that could be made easily.
