Methi Thepla

Prep Time:30 m      Cook Time:30m
Makes:10 - 12

Ingredients

Wheat Flour           - 1 cup
Gram Flour             - 1/2 cup
Methi Leaves          - 1 cup(chopped)
Ginger Garlic Paste - 2tsp
Chilli Powder          - 3/4 tsp
Cumin Powder        - 1/2 tsp
Turmeric Powder    - 1/4 tsp
Garam Masala        - 1/4 tsp
Ajwain                    - 1/4 tsp
Yoghurt                  - 1/2 cup
Salt                        - to taste
Oil/ghee                  - to grease

Method

  • Take  all the ingredients from wheat flour to salt in a mixing bowl.
        
  • Make a soft dough.Add little water as the moisture in the methi leaves would be sufficient to some extent.
                            
       
  • Make small balls,roll into chappathis and cook on both sides drizzling ghee /oil in a hot tawa.Serve with raita and pickle or any chutney of choice.

Carrot Ginger Soup

Ingredients

Carrot               - 2
Ginger               - 1"piece
Cinnamon          - 1"piece
Pepper Powder - to  taste
Salt                    - to taste
Cream/Yoghurt   - to garnish

Method

  • Take grated carrot,ginger and cinnamon stick in a pan and add little water and cook till the carrot is done.
      
  • Let it cool slightly and blend it in a blender.Then pour it back in the pan and heat it again.Add freshly ground pepper and salt.Serve it with a drizzle of fresh cream or plain yoghurt.

Veg Paniyaram with Pav Bhaji Masala

Ingredients
Dosa Batter         - 2 cups   
Mixed Veg          - 1 cup(carrot,cauliflower,peas,potato)
Onion                  -  1
Curry Leaves       - few
Mustard Seeds     - to splutter
Coriander Leaves - 2 tblsp
Pav Bhaji Masala  - 2 tsp
Salt                       - to taste
Oil/Ghee               - as desired

Method

  • Heat oil in a pan,splutter mustard seeds,add onion,curry leaves and saute for a while.Now add all the vegetables and add little salt and water and cook.
      
  • Once the vegetables are cooked add pav bhaji masla and coriander leaves.
      
  • Now add this to the dosa batter and mix.Heat oil in paniyaram pan and pour a ladle of batter and cook both sides turning carefully with a fork or a skewer.

Tomato Dosai

 

Ingredients

Dosa Batter         - as desired
Tomato                - 4
Onion                  -  1
Chilli Powder      -  3/4 tsp
Turmeric Powder -  a pinch
Salt                      - to taste
Curry Leaves       - few
Coriander Leaves - to garnish
Grated Coconut    - as desired
Mustard Seeds      - to splutter
Oil                         - 1 tblsp

Method

  • Heat oil in a pan,splutter mustard seeds,add curry leaves.onions,chopped tomatoes,turmeric powder,,salt ,chilli powder and saute well till tomatoes are cooked well and it swirls in the pan.Add finely chopped coriander leaves and give it a mix.
                 

     
  • Heat dosa tawa and pour a ladle of batter and spread it.Drizzle oil or ghee and cover with a lid and cook.Remove lid and spread some tomato on one half side and sprinkle some grated coconut and fold it.Serve hot with coconut chutney.

  • Coconut can be added to the tomato masala as well.
  • Tastes divinely as such also. If desired use ghee for dosa.

Aloo Palak Stir Fry

Ingredients       

Baby Spinach   - 200 g
Potato              - 2(peeled & chopped)
Onion               - 2 tblsp
Cumin              - to splutter
Salt                   - to taste
Pepper Powder - to taste
Oil                    - 2 tsp

Method

  • Heat oil in a pan,splutter cumin seeds,add the onions and fry till onions are transparent.Now add the potatoes chopped into small pieces and saute for a while.Add salt and sprinkle water and cover with a lid and cook.
       
  • Once the potatoes are cooked add pepper powder and the chopped spinach and give it a toss.Add little more pepper powder if desired and serve along with rice.
