Broccoli Leeks Soup

Prep Time:10 m      Cook Time:15 m
Serves:3

Ingredients

Broccoli           - 1 small floret
Leeks               - 1
Salt                   - to taste
Pepper powder - to taste

Method

  • Boil water in a sauce pan,add salt and add the separated broccoli florets and finely chopped leeks.Once the vegetables are cooked switch off the flame,bring it to room temperature,strain the liquid and then blend.Then add the strained liquid, reheat the soup and transfer to serving bowls adding salt and pepper as desired.

  • Add cumin powder or butter or fresh cream if desired.

Barley Soup with Vegetables

Prep Time:10 m      Cook Time: 20 m
Serves:3

Ingredients

Soup Broth Mix - 1/2 cup(soaked for 6 hours)
Vegetables         - 1 & 1/2 cup(carrot,beans,cauliflower,onion,tomato)
Pepper Powder   - to taste
Butter                 - to garnish
Salt                     - to taste
Milk                    - 1 cup

Method

  • Soak the barley mix for atleast three hours and then pressure cook for six whistles along with vegetables adding little salt.
                                     
       
  • Mash it with a hand blender or with the back of a ladle.Now add milk and cook on low flame for another five to ten minutes.Add salt and pepper to taste.Transfer to serving bowls and add a dollop of butter if desired.

  • Fresh cream can be used instead of milk.

Carrot Ginger Soup

Ingredients

Carrot               - 2
Ginger               - 1"piece
Cinnamon          - 1"piece
Pepper Powder - to  taste
Salt                    - to taste
Cream/Yoghurt   - to garnish

Method

  • Take grated carrot,ginger and cinnamon stick in a pan and add little water and cook till the carrot is done.
      
  • Let it cool slightly and blend it in a blender.Then pour it back in the pan and heat it again.Add freshly ground pepper and salt.Serve it with a drizzle of fresh cream or plain yoghurt.
