Rawa Kesari/Sooji Halwa


IngredientQuantity
Rawa/Sooji1 cup
Milk+water3 cups
Sugar1/2 cup
Ghee2 tblsp
Nuts and raisinsfew
Orange/yellow food coloura pinch

Cooking Steps

  • Heat a tablespoon of ghee in a pan and roast rawa till the smell wafts out and set this aside.
  • Heat the remaining ghee in the pan and roast the nuts and raisins.Add milk+water to this and bring it to a boil.
      
  • Add food colour to this and mix well.(you can also dissolve it in milk and add).Now gradually add roasted rawa stirring with one hand while adding with the other to ensure that no lumps are formed.
      
  • Once rawa is cooked add sugar and stir well.Add more ghee if desired and serve hot.

  • A sweet that can be made in a jiffy.
  • The colours look different just because of variations in light.
  • The ratio of milk and water can be added as per individual taste.

Sweet Corn Halwa


IngredientQuantity
Sweet corn2 cups
Milk1 1/2 cup
Sugar1/4 cup
Ghee3 tblsp
Nutsfew
Cardamom Powder1/4 tsp(optional)

Cooking Steps

  • Grind sweet corn with half a cup of milk into a paste.Heat ghee in a pan and add the sweet corn paste and add the remaining milk and stir continuously.
       
  • Add sugar when the mixture swirls in the pan and stir well for five more minutes.Sprinkle cardamom powder and garnish with nuts(cashew,almond,pista) fried in ghee.

  • You can use fresh or frozen sweet corn.
  • A delicious sweet which consumes less sugar.
  • Healthy for kids as well.

Spinach Coconut Curry


IngredientQuantity
Spinach200 g
Grated Coconut1/4 cup
Green Chilli1
Onion1
Mustard Seedsto splutter
Urid Dal1/2 tsp
Turmeric Powdera pinch
Curry Leavesfew
Saltto taste
Oil2 tsp

Cooking Steps

  • Heat oil in a pan,splutter mustard seeds,add urid dal,curry leaves,onion and saute till onion becomes transparent.Add turmeric powder,salt and spinach.
      
  • Add coconut green chilli paste to this and cook for five more minutes and serve with plain rice or roti.
      
Little words
  • You can add butter for a rich taste.
  • While grinding coconut and green chilli a teaspoon of cumin seeds can also be added.
  • You would surely love the aroma and taste of this curry.

Tomato Idli Upma

Chilli Powder1/2 tsp
Turmeric Powdera pinch
Mustard Seeds1/4 tsp
Urid Dal1/4 tsp
Curry Leavesfew
Coriander Leavesto garnish
Saltto taste
Oil2 tsp

Cooking Steps

  • Crumble idli finely.Heat oil in a pan,splutter mustard seeds,urid dal add curry leaves,onion and saute.
      
  • Add tomato,turmeric powder,chilli powder,salt and saute till tomatoes become mushy.Now add crumbled idli,mix it well.Garnish with coriander leaves and serve.
                      
      


Little words
  • I prepared this with leftover idlis.You can make with fresh idli as well.
  • Referigerate idli to crumble them finely.
  • A tasty upma with leftover idli.

Pudina Chutney Idli

Pudina Chutney4 tblsp

Green Chilli 1
Hot&Sweet Tomato Chilli Sauce1 tsp
Mustard Seeds1/4 tsp
Urid Dal1/4 tsp
Curry Leavesfew
Coriander Leavesto garnish
Saltto taste
Oil2 tsp

Cooking Steps

  • Cut idlis into small pieces.Heat oil in a pan,splutter mustard seeds,urid dal,add curry leaves,green chilli,onion,little salt and saute till onion changes colour.
  • Add pudina/mint chutney,maggi chilli sauce and mix them well.

  • Now toss in the idli pieces and mix them well.Garnish with coriander leaves and serve with coconut chutney or just as it is.
       
Little words
  • I prepared this with leftover mint chutney and the taste was too good.
  • Add very little salt as there is salt in idli as well as in chutney.
  • You can squeeze in some lime juice too while serving.

Cashew Cocoa Balls

Cashew1 cup
Sugar1/2 cup
Cocoa Powder1 tblsp
Gheeto grease

Method

  • Powder cashewnut.Meanwhile prepare sugar syrup of one string consistency.
                       
  • Add cocoa powder and powdered cashew to the sugar syrup and stir well for few minutes and when it swirls in the pan transfer to a tray greased with ghee.Make small balls or let it cool well and cut into pieces.
         
Little words
  • Kids would love this chocolate balls.
  • This can be cut into pieces like katli as well.Let it cool well or referigerate to get fine pieces.
  • Anyway kids would love them as balls. 
  • The sugar syrup should form a string when you touch between your thumb and index finger.

Cauliflower Pakoda

Gobi Pakoda

IngredientQuantity
Cauliflower1 cup(cut into small florets) 
Gram Flour4 tblsp
Rice Flour2 tblsp
Chilli Powder1/2 tsp
Baking Soda/bicarb of sodaa pinch
Saltto taste
Oilto deep fry

Cooking Steps

  • Cut cauliflower into small florets and add them into salted boiling water for five minutes.
  • In a bowl mix all the other ingredients with very little water.Now drain and add the gobi florets into this.Mix well such that the batter coats well over the florets.Drop them in hot oil and fry till golden brown.
              
       

Little words
  • Serve with any sauce or chutney or just plain.
  • A good teatime snack.
  • The florets would be half cooked in the hot water itself.
