Cauliflower Roast

Prep Time:5 m       Cook Time:20 m
Serves:2

Ingredients

Cauliflower         - 1 flower
Chilli Powder      - 1 tsp
Coriander Leaves - to garnish
Salt                     - as required
Oil                      - 1 tblsp

Method

  • Separate the cauliflower into small florets.Bring a vessel of water to boil and add little salt.Drop the cauliflower florets in this salted boiling water for five to eight minutes and then drain.
       
  • Heat oil in a pan and add the cauliflower florets and saute for two to three minutes.Add little salt,chilli powder and cumin powder and give it a toss.Garnish with coriander leaves and serve.

  • Sprinkle little water after adding chilli powder to avoid burning.
  • A nice combo for curd rice,rasam,sambar..

Muesli Cookies

Prep Time:10 m     Cook Time:12-15 m
Makes:24

Ingredients

Butter              - 175 g
Honey              - 3 tblsp
Muesli              - 225 g
Plain Flour       - 150 g
Baking Powder - 2 tsp
Brown Sugar     - 50 g

Method

  • Preheat the oven to 180 degree c.Melt butter and add honey to this.Sift flour and baking powder in a large mixing bowl.Add muesli and sugar to this and mix them all together.
       
  • Add the butter and honey mix to this and mix well.Take a spoonful of this cookie mix and place on a baking tray with an inch space between them.Bake for twelve to fifteen minutes.Cool on a wire rack and store in an airtight container.

Crispy Creamy Sandwich

Prep Time:2 m       Cook Time:10 m
Serves:2

Ingredients

Bread      - 3 slices
Icecream - as desired
Ghee       - 2 tblsp

Method

  • Remove the edges of the bread slices and cut them into halves.Heat ghee in a pan or tawa and toast the slices on medium flame until they are golden brown and crisp.

       

  • Now let them cool slightly and place a tablespoon of icecream,spread  and cover it with another slice.Repeat this for one more layer with icecream and relish the crispy softy texture of the sandwich.

  •  Yummilicious and quick dessert so easy to make.
  • Spread icecream at the time of serving and let the toasties to cool slightly.
  • Use fruit jam for the second layer if desired.

Garlic Bread

Prep Time:5 m       Cook Time:10 m
Serves:2
Ingredients 
Baguette               - 8 slices
Butter                   - 30 g
Garlic                   - 4
Coriander Leaves  -2 tsp
Method
  • Melt butter and add grated or finely crushed garlic to it.Add finely chopped coriander leaves and mix well.
                                 
       
  • Apply this on both sides of  the baguette slices and bake for about twelve minutes or until golden brown colour in a preheated oven at 180 degrees c.
       
       

Little Words

  • I have used partly baked white baton.
  • Perfect with a cup of warm soup.
  • Regular bread can be used as well and toasted on a tawa on low flame.

Mutton Gravy

Prep Time:15 m      Cook Time:25 m
Serves:3

Ingredients

Mutton                - 400 g
Shallots               - 15
Onion                  - 1
Ginger                 - 1"piece
Garlic                  - 4
Curry Leaves       - 2 sprigs
Curry Powder      - 1& 1/2 tblsp
Fried Gram Dal/
Pottukadalai         - 1 & 1/2 tblsp
Turmeric Powder  - 1/4 tsp
Aniseed                - to splutter
Salt                       - as required
Oil                        - 2 tsp

Method

  • Heat a teaspoon of oil in a pan,add the shallots,ginger and garlic and saute for a few minutes.
  • Transfer this to a mixer jar.Add fried gram and curry powder to this and grind this into a paste.
       
  • Now heat oil in a pressure cooker,splutter aniseed,add curry leaves,sliced onion,little salt and saute till onion becomes soft.
       
  • Add turmeric powder and the lamb pieces to this and saute for two minutes until the meat has turned brown on all the sides.
       
  • Now add the curry paste and required salt and water.Close the lid and wait for six to eight whistles.Once the pressure is released open the lid and transfer to a serving bowl.

Badam Kheer

Prep Time:10 m  + soaking time   Cook Time:25 m
Serves:2

Ingredients

Badam/Almond - 1/4 cup
Milk                  - 2 cup
Saffron             - few strands
Sugar                - 2 tblsp

Method

  • Soak almonds for an hour and peel off the skin.Grind it to a paste with little milk.
                               
  • Boil milk in a pan and add the saffron strands to it.Simmer the milk and when it has reduced to 3/4 th of its volume add the badam paste and mix well.Now keep stirring for another five to ten minutes.Now add sugar and mix well.Let this cool slightly and then transfer to serving bowls.Referigerate and garnish with finely chopped almonds and serve.
