Choco Idli

Prep Time:5 m       Cook Time:12 m
Makes:6

Ingredients

Idli Batter        - 1 cup
Cocoa Powder  - 1/4 cup
Sugar               - 2 tblsp

Method

  • Mix cocoa powder and sugar to the idli batter.Grease an idli plate with oil and pour the batter into the idli moulds.Steam cook for ten to twelve minutes.Insert a skewer and when it comes out clean the idlis are done.Serve with honey or whipped cream or even as such with little more sugar.

Cassava Fries/Maravallikizhangu Chips

Prep Time:10 m    Cook Time:30 m
Servings:4

Ingredients

Casssava        - 2
Salt                - to taste
Chilli Powder - to taste
Oil                 - to deep fry

Method

  • Bring a large pan of salted water to boil.Meanwhile cut the cassava into halves and peel the skin with the help of a knife.Make a slit and then carefully run the knife to take off the skin.
       
  • Place the cassava in boiling water for about ten to twelve minutes and then remove and let cool slightly.Then cut them into finger length pieces of about a cm in thickness.
                            
  • Now fry them in hot oil till they are golden brown in colour,drain on a paper towel and sprinkle salt and chilli powder.

  • Take care while peeling the skin.
  • Boil the cassava until they are half cooked or parboiled.

Paruppu Podi

Prep Time:5 m      Cook Time:15 m
Makes:200 g approx.

Ingredients

Toor Dal            - 3/4 cup
Fried Gram Dal  - 3/4 cup
Dried Red Chilli - 8-10
Asafoetida         - 1/4 tsp
Salt                   - as needed

Method

  • Dry roast the red chilli,toor dal and fried gram dal one by one.Add salt and asafoetida.Let it cool and grind them in a mixer in batches.Spread in a plate to mix all the batches and then store in an airtight container.

  • Sprinkle the paruppu podi on hot steaming rice with a drizzle of ghee and yummm.
  • Grind the toor dal and red chilli first and then add fried gram dal and grind them together to make grinding easier.

Mixed Veg Halwa

Prep Time:20 m     Cook Time:25 m
Serves:3

Ingredients

Carrot           - 1/2 cup
Potato           - 1/2 cup
Cauliflower   - 1/2 cup
Bottle Gourd  - 1/2 cup
Paneer           - 1/2 cup
Milk               - 2 & 1/2  cup
Sugar             - 1/2 cup
Cardamom     - 2
Ghee             - 2 tsp
Nuts              - as desired

Method

  • Peel carrot,potato and bottle gourd.Chop them as finely as possible.Place cauliflower florets in a bowl of warm water and then grate.Grate paneer.Boil milk in a pan.Then add the vegetables one by one.First add bottle gourd.After a few minutes add carrots followed by potato and cauliflower.
                          
                             
       
  • Now the milk would have almost reduced and the veggies cooked up.Add sugar,cardamom powder and give it a mix.Then add grated paneer and give a final stir.Transfer to serving bowls and garnish with chopped nuts.

  • Vary the vegetables as desired.
  • Add milk if all the milk is absorbed towards the end.
  • Adjust the quantity of sugar as needed.

Potato Manchurian


Prep Time:15 m     Cook Time:25 m
Serves:3

Ingredients

Potato        - 3(medium sized)
Corn Flour - 1/4 cup
Plain Flour - 1/2 cup
Salt             - as required
Oil              - to deep fry

For the manchurian
Onion                      - 2
Spring Onion           - 1
Green Chilli Paste   - 1/2 tsp
Garlic                      - 3(chopped)
Tomato Sauce          - 1tblsp
Soy Sauce                - 1tblsp

Method

  • Wash,peel and cut the potatoes into bite sized cubes.Place the potatoes in salted boiling water for three minutes and drain the excess water.
       
  • Make a batter with the flours,salt and little water.
       
  • Dip the potatoes in the batter and deep fry in batches in hot oil till golden in colour.
                       
       
  • Now heat oil in a pan and add the garlic,white portion of spring onion followed by the green.Then add the finely chopped onions and green chilli paste and saute well.
                             
  • Now add the sauces and give it a mix.Toss in the fried potatoes in this and stir.Transfer to a serving plate and garnish with spring onion greens.
