Paneer Croquettes

Prep Time:5 m       Cook Time:10 m
Makes:8 - 10

Ingredients

Paneer          - 150 g
Gram Flour    - 1/3 cup
Ajwain           - 1/4 tsp
Cumin Seeds  - 1/4 tsp
Salt               - as required
Chilli Powder - 1/2 tsp
Asafoetida     - a pinch
Corn Flakes    - 1/2 cup(crushed)
Oil                 - to deep fry

Method

  • Mix gram flour,chilli powder,cumin seeds,ajwain,salt and asafoetida.Add required water and make a batter slightly thinner than bajji batter.Meanwhile heat oil in a kadai to deep fry.
  • Cut the paneer into finger length pieces.Dip the paneer fingers in the batter and roll in crushed cornflakes.
                                
  • Prepare all the paneer in the same way.Once the oil is hot,fry them gently turning the other side.The paneer croquettes will be ready in three to four minutes.

  • While rolling in cornflakes use the other hand so that the flakes do not stick to your hands.
  • Crush the cornflakes with hands so that it is not too powdery.
  • A delicious evening snack that is crunchy on the outside and soft inside.

Baby Potato Roast

Prep Time:5 m       Cook Time:25 m
Serves:3

Ingredients

Baby Potato - 20
Salt              - to taste
Pepper         - to taste
Oil               - 1 to 2 tblsp

Method

  • Wash the baby potatoes and boil them in salted water for ten minutes.Drain them and pour cold water over the potatoes.Once they are cool cut them into halves.
       
  • Heat oil in a pan and place the potatoes separately.After few minutes turn the other side and roast for few minutes till they are golden brown.Repeat the process for the remaining potatoes too.
       
  • Now return all the roasted potatoes to the pan and sprinkle salt and pepper as per taste and serve.

  • The skin can be peeled off  if you don't prefer with skin.
  • Tastes great as simple as it is...
  • Can be had as an after school snack..

Paneer Chaat

Prep Time:10 m      Cook Time:10 m
Serves:2

Ingredients

Paneer                      - 250 g
Cumin Powder         - 1/4 tsp
Chilli Powder           - 1/4 tsp
Dry Mango Powder  - 1/4 tsp
Chaat Masala            - 2 pinches
Coriander Leaves     - few
Salt                           - to taste
Oil                            - 2 tbl sp

Method

  • Cut paneer into bite sized cubes.Heat oil in a frying pan and shallow fry the paneer pieces till they are golden brown in all the sides.Sprinkle all the remaining ingredients and transfer to a plate and serve.

  • Toss them gently to avoid crumbling.
  • After frying the paneer cubes you can transfer to serving plate and then toss in the spices.This way spices won't stick to the pan.

Masala Pori

Prep Time:15 m      Cook Time:Nil
Serves:2

Ingredients

Pori                      - 2 cups
Onion                   - 1
Tomato                 - 1
Carrot                   - 1/4 cup(grated)
Chilli Powder       - 3/4 tsp
Coriander Leaves - 2 tbl sp
Salt                       - to taste
Gingelly Oil         - 1 tbl sp
Lemon                  - a wedge
Chaat Masala       - a pinch(optional)
Roasted Peanuts   - 1/4 cup

Method

  • Mix oil with pori and set aside.Meanwhile finely chop all ingredients and roast peanuts and remove skin by rubbing with palm.Mix together all the ingredients and squeeze lemon on top and garnish with roasted peanuts and serve.

  • Mix the ingredients together just at the time of serving to avoid sogginess.
  • Boondi,Sev...can also be added.
  • A spicy snack that could be made easily.
