Chappathi Bajji


Bajji is one of the easiest snack that can be prepared in a jiffy.This chappathi bajji is a must try for all the bajji lovers.If the bajji mix is ready then this won't take more than twenty minutes.Perfect for a evening snack,on a rainy day,with a hot cup of coffee or tea.
Prep Time:5 m       Cook Time:15 m
Serves:3

Ingredients

Chappathi      - 5
Gram Flour    - 1 cup
Rice Flour      - 2 tblsp
Chilli Powder - 3/4tsp
Asafoetida      - 1/4 tsp
Salt                - as required
Oil                  - to deep fry

Method

  • Mix all the ingredients from gram flour to salt with water to a thick bajji batter.
     
  • Cut the chappathis into pieces of desired size.Dip the chappathi pieces in bajji batter and gently drop into hot oil and fry till golden colour.Place them on a kitchen towel to remove any excess oil if present.Serve plain or with any chutney.

Kala Channa Quinoa

Prep Time:15 m     Cook Time:30 m
Serves:3

Ingredients

Quinoa               - 1 cup
Kala Channa       - 1/2 cup
Onion                 - 1
Tomato               - 3
Green Chilli        - 2
Chilli Powder      - 1/2tsp(preferably kuzhambu milagai thool)
Mustard Seeds     - to splutter
Curry Leaves       - a sprig
Coriander Leaves - to garnish
Turmeric Powder  - 1/4 tsp
Salt                      - as needed
Oil                       - 2 tsp

Method

  • Soak kala channa for six hours or overnight and pressure cook for three whistles with little salt.
  • Add two cups of water for one cup of quinoa and cook it covered in medium flame until all the water is absorbed.Quinoa becomes transparent when it is cooked.
                            
       
  • Meanwhile heat oil in a pan,splutter mustard seeds,add finely chopped onions,curry leaves,green chilli and saute until onion becomes soft.
       
  • Now add chopped tomatoes,turmeric powder,salt and chilli powder and sute till tomatoes become mushy.
       
  • Add the boiled channa along with its water to this and cook for two minutes.Finally add cooked quinoa and garnish with coriander leaves and serve with plain curd.

  • Quinoa can be treated as we treat rice.

Inji Pal/Ginger Milk

 
Prep Time:1 m    Cook Time:3 m
Serves:2

Ingredients

Ginger                   - 1" piece
Milk                      - 1/4 cup
Water                   - 1/2 cup
Panakarkandu/
Palm Sugar Candy  - 1 tsp

Method

  • Add grated or crushed ginger to water and boil it for three to four minutes.Strain the liquid and add palm sugar candy and stir it to dissolve.Now add milk and drink this in the morning.

  • This drink is not advisable for those who have ulcer problems.
  • Ginger milk is very good for burning fat and thus it is a weight loss drink.
  • This can be had twice a week.

Choco Idli

Prep Time:5 m       Cook Time:12 m
Makes:6

Ingredients

Idli Batter        - 1 cup
Cocoa Powder  - 1/4 cup
Sugar               - 2 tblsp

Method

  • Mix cocoa powder and sugar to the idli batter.Grease an idli plate with oil and pour the batter into the idli moulds.Steam cook for ten to twelve minutes.Insert a skewer and when it comes out clean the idlis are done.Serve with honey or whipped cream or even as such with little more sugar.

Cassava Fries/Maravallikizhangu Chips

Prep Time:10 m    Cook Time:30 m
Servings:4

Ingredients

Casssava        - 2
Salt                - to taste
Chilli Powder - to taste
Oil                 - to deep fry

Method

  • Bring a large pan of salted water to boil.Meanwhile cut the cassava into halves and peel the skin with the help of a knife.Make a slit and then carefully run the knife to take off the skin.
       
  • Place the cassava in boiling water for about ten to twelve minutes and then remove and let cool slightly.Then cut them into finger length pieces of about a cm in thickness.
                            
  • Now fry them in hot oil till they are golden brown in colour,drain on a paper towel and sprinkle salt and chilli powder.

  • Boil the cassava until they are half cooked or parboiled.

Paruppu Podi

Prep Time:5 m      Cook Time:15 m
Makes:200 g approx.

Ingredients

Toor Dal            - 3/4 cup
Fried Gram Dal  - 3/4 cup
Dried Red Chilli - 8-10
Asafoetida         - 1/4 tsp
Salt                   - as needed

Method

  • Dry roast the red chilli,toor dal and fried gram dal one by one.Add salt and asafoetida.Let it cool and grind them in a mixer in batches.Spread in a plate to mix all the batches and then store in an airtight container.

  • Sprinkle the paruppu podi on hot steaming rice with a drizzle of ghee and yummm.
  • Grind the toor dal and red chilli first and then add fried gram dal and grind them together to make grinding easier.
