Ingredients
Basmati Rice - 1 cup(soaked for half an hour)
Beetroot - 1(3/4 cup when grated)
Onion - 1
Curry Leaves - 2 sprigs
Coriander Leaves - 1/4 cup
Aniseed - 1/2 tsp
Khus khus - 1/4 tsp
Bay Leaf - 2
Cardamom - 3
Clove - 2
Cinnamon - 1"piece
Ginger - 1"piece
Garlic - 4 cloves
Green Chilli - 3
Garam Masala - 1/2 tsp
Salt - to taste
Oil - 2 tsp
Ghee - 1 tsp
Method
- Heat oil and ghee in a pressure cooker and splutter aniseed,khus khus,add bay leaves,cardamom,cinnamon,clove,curry leaves,green chilli and onion.Fry till onion turns transparent.Now add grated ginger and garlic.
- Now add grated beetroot,coriander leaves and salt.Saute for a while and add required amount of water.Bring it to a boil and add soaked rice and garam masala,Check salt and close the lid and pressure cook for one whistle and then simmer for five minutes and then switch off the flame.Leave it on the hot stove for five minutes and then set aside the cooker.Open the lid once pressure releases,fluff it gently with a fork and serve with onion raita.
Little Words
- Mint leaves can also be added if desired.
- Adjust the quantity of water as required.While pressure cooking basmati rice 1 & 1/2 cup water is sufficient for one cup of rice provided the rice is soked for half an hour.
