Vegetable Jalfrezi

Prep Time:15 m      Cook Time:20 m
Serves:3

Ingredients

Onion                   - 1 
Tomato                 - 1
Ginger                  - 1"piece
Garlic                   - 3
Mixed Vegetables - 1 & 1/2 cup(carrot,beans,broccoli,cauliflower,potato)
Capsicum              - quarter of each colour(or 1 whole of any colour)
Coriander Powder  - 2 tsp
Cumin Powder       - 2 tsp
Red Chilli Powder - 3/4 tsp
Cumin Seeds         - to splutter
Salt                      - as needed
Oil                        - 2 tsp
Fresh Cream         - 2 tblsp

Method

  • Heat oil in a pan,splutter cumin seeds,add onion,little salt and saute for a while.Then add crushed ginger and garlic and fry them for a few minutes.
       
  • Now add vegetables,tomato and saute for a about four minutes.Add the chopped tomatoes,coriander powder,cumin powder,chilli powder and salt.Give it a stir and then add capsicum.Sprinkle water,cover with a lid and cook for another five miutes.Switch off the flame once the veggies are done.Add fresh cream and transfer to serving bowl.Serve with chapathis.

Egg Masala

Prep Time:10 m       Cook Time:25 m
Serves:3

Ingredients

Hard boiled Egg     - 3
Onion                    - 1
Tomato                  - 2
Mustard Seeds        - to splutter
Cumin Seeds          - to splutter
Curry Leaves          - asprig
Green Chilli            - 1
Ginger Garlic Paste - 1 tsp
Turmeric Powder    - 1/4 tsp
Coriander Powder   - 2 tsp
Chilli Powder          - 1/2 tsp
Cumin Powder        - 1 tsp
Aniseed Powder      - 1/2 tsp
Pepper Powder        - 1/4 tsp
Garam Masala         - 1/4 tsp
Salt                        - as required
Oil                          - 2 tsp

Method

  • Heat oil in a pan,splutter mustard seeds,cumin seeds,add green chilli,curry leaves,onion and little salt.Saute till onion becomes soft.Then add ginger garlic paste and saute till raw smell goes off.
       
  • Add the chopped tomatoes and saute till they are mushy.
       
  • Now add all the spice powders and add required water.Allow this to cook for about ten minutes.Then add the hard boiled eggs cut into halves and cook for few minutes.Serve with chappathi,roti,rice,idli,dosa,pulaos....

Peas Potato Paneer Sabzi

Prep Time:10 m      Cook Time:20 m
Serves:2

Ingredients

Potato               - 2(medium sized)
Paneer               - 100 g
Peas                  - 1/2 cup
Onion                - 1
Garlic                - 2 cloves
Tomato              - 2
Tomato Ketchup - 1 tsp
Soy Sauce           - 1/2 tsp
Sugar                  - 1/2 tsp
Salt                    - as required
Chilli Powder      - 1/2 tsp
Spring Onion       - 1
Oil                      - 1 tblsp

Method

  • Wash,peel and dice the potatoes.Heat a teaspoon of oil in a pan,add little salt and saute the potatoes until they are almost cooked.Transfer this to another bowl and set aside.
       
  • Rinse the pan and heat oil,add chopped garlic,saute and then add chopped onions,white portion of the spring onion and saute well.
       
  • Now add tomatoes and saute till tomatoes are mushy.Add salt and red chilli powder.Then add the sauces,sugar and add little water and let this cook for few minutes.
       
  • Now add potatoes,paneer cubes and peas.Stir them alltogether and cook for further few minutes and transfer to serving bowl.garnish with spring onion greens and serve with rotis.

Spinach Cheese Paniyaram

Prep Time:5 m        Cook Time:15 m
Makes:25

Ingredients

Dosa Batter      - 2 cups
Spinach            - 1 cup(chopped)
Onion               - 1
Green Chilli     - 1
Cheese             - 1/2 cup
Mustard Seeds - to splutter
Capsicum         - 1/2
Salt                  - as required
Oil                    - 2 tsp

Method

  • Heat oil in a pan,splutter mustard seeds,add green chillies,onion,salt and saute till onion becomes soft.Add the capsicum followed by spinach.Saute till spinach wilts.Switch off the flame,add cheese and mix them.Add this to the batter and mix well.
                         
                                 
                               
  • Meanwhile heat a paniyaram pan and grease with oil.Once the pan is hot pour the batter in all the moulds and cook on both sides turning gently with a stick or a fork.Repeat this until the batter is finished.Serve plain or with chutney.

  • Insert a skewer to check if it is cooked.
  • Dilute the fermented dosa batter for making paniyarams.

Vangi Bhath/Brinjal Rice

Prep Time:15 m      Cook Time:20 m
Serves:3

Ingredients

Rice                 - 2 cup(cooked)
Brinjal             - 250 g
Curry Leaves   - a sprig
Channa Dal      - 1 tsp
Mustard Seeds - to splutter
Tamarind         - amla sized(soaked in water and extracted)
Oil                  - 1 tblsp
Salt                 - as required

To Roast and Grind

Channa Dal         - 1 tsp
Dried Red Chilli  - 4
Coriander Seeds  - 2 tsp
Cumin Seeds       - 3/4 tsp
Peppercorn         - 1/2 tsp
Fenugreek          - 1/2tsp
Khus khus           - 1/4 tsp
Cinnamon           - 1"piece
Clove                  - 3
Coconut              - 1 tblsp
Asafoetida          - a pinch
Turmeric Powder - 1/4 tsp

Method

  • Roast the ingredients from channa dal to clove one by one and powder them along with coconut,asafoetida,turmeric powder.
      
  • Heat oil in a pan,splutter mustard seeds,add curry leaves and channa dal followed by chopped brinjal.Add little salt and saute for a while.Now add the spice powder,tamarind extract and required water,salt and cover this with a lid.Allow this to cook.This will take about twelve minutes.
                                         
                               
  • Once the above mixture is cooked add the cooked rice and gently mix them all together and serve with papads or raita.

  • Grind the powder without coconut and store it for few months.This can be used for other curries and gravies.
