Mung Beans Kuruma

Mung beans are high in nutritional value and can be used in a number of dishes.This mung beans kuruma is a good accompaniment for rice,rotis,idli,dosa..

Prep Time:15 m     Cook Time:25 m
Serves:3

Ingredients

Mung Beans      - 1/4 cup
Onion                - 1
Tomato              - 2
Garlic                - 3 cloves
Mustard Seeds    - to splutter
Cumin Seeds       - 1/2 tsp
Turmeric Powder - 1/4 tsp
Chilli Powder      - 1/2 tsp
Castor Oil            - 1/2 tsp
Oil                       - 2 tsp
 
To Grind

Coconut       - 3 tblsp
Clove           - 3
Cinnamon     - 1"piece
Khus Khus    - 1/4 tsp
Aniseed        - 3/4 tsp

Method

  • Soak mung beans for atleast two hours.Add castor oil,turmeric powder and garlic.Pressure cook this for three whistles and set aside.
       
  • Grind the ingredients to grind into a paste and add this to the cooked mung beans.Add chilli powder,required water,salt and bring it to boil.
                              
       
  • Heat oil in a pan,splutter mustard seeds,cumin seeds,add onion,little salt and saute for a while.Then add chopped tomatoes and saute.Now add this to mung beans,give it a mix and switch off the flame.Serve with rice,chappathi...

  • Instead of red chilli powder kuzhambu milaga podi can be used.
  • A mild dish taht goes very well with rice,chappathi,dosai..

Kalaan Kuzhambu/Mushroom Curry

Prep Time:15 m      Cook Time:20 m
Serves:2

Ingredients

Mushroom                 - 200 g
Onion                        - 1
Mustard Seeds            - to splutter
Curry Leaves Powder - 1 tsp
Curry Powder             - 2 tsp
Fried Gram Powder    - 2 tsp
Turmeric Powder       - a pinch
Coriander Leaves       - to garnish
Salt                           - to taste
Oil                            - 2 tsp

Method

  • Heat oil in a pan,splutter mustard seeds,add curry leaves,onion and saute till onion becomes soft.Add chopped mushrooms and saute for a few minutes.
       
  • Add turmeric powder,salt and curry powder and give it a mix.
       
  • Add fried gram powder mixed in water to this and curry leaves powder(if using).Let it cook until the mushrooms are done.Transfer to a serving bowl and garnish with coriander leaves.

  • I have used curry leaves powder as I ran out of fresh curry leaves.
  • An easy and yummy gravy.
  • Instead of curry powder a mixture of coriander powder,cumin powder and garam masala can be used as well.

Mushroom Masala

Prep Time:15 m      Cook Time:20 m
Serves:3

Ingredients

Mushroom               - 250 g
Onion                      - 1
Tomato                    -1
Red Chilli                - 4
Curry Leaves           - 1 sprig
Ginger Garlic Paste - 1 tbl sp
Turmeric Powder     - a pinch
Curry Powder           - 1 tsp
Mustard Seeds          - to splutter

Method

  • Heat oil in a kadai,splutter mustard seeds,add curry leaves,red chillies,onion and saute for a while.Add ginger garlic paste and saute till raw smell goes off,
       
  • Add chopped mushroom,salt and saute for a while and then add chopped tomatoes.Add turmeric powder and curry powder,add little water,cover with lid and cook until the mushrooms are done.
                        

Little Words

  • Mushroom goes well with rice and roti varieties.Adjust the consistency for idli dosa by adding coriander powder and garam masala.
  • Add little water as the mushrooms are juicy in nature.

Murungaikai Masala

Prep Time:15 m      Cook Time:20 m
Serves:3

Ingredients

Drumstick           - 4
Onion                  - 1
Tomato                - 2
Curry Leaves       - 2 sprigs
Mustard Seeds     - to splutter
Sambhar powder  - 1 tsp
Turmeric powder - 1/4 tsp
Asafoetida            - 1/4 tsp
Salt                      - to taste
Oil                        - 2 tsp

To Grind
Coconut     - 1/4 cup
Cashewnut - 4(optional)
Aniseed      - 1 tsp
Khus khus  - 1/2 tsp

Method

  • Cut the drumstick into about 2 &1/2 inch pieces and peel off the skin as and when you cut them.Boil water in a vessel and add little salt and turmeric powder and cook until the drumstick is soft.
       
  • Meanwhile heat a teaspoon of oil in a pan and add roughly chopped onions and saute till it changes colour.Then add tomatoes and saute till they become mushy.Let it cool and blend into a paste.
                                   
       
  • Heat oil in the pan splutter mustard seeds,add asafoetida,curry leaves and the onion tomato paste.Add turmeric and sambhar powder to this.
       
  • Meanwhile grind together coconut,cashew,aniseeds and khus khus into a paste.
  • Add the coconut paste to the onion tomato gravy and add salt.Let this boil for a few minutes until the gravy thickens.Then add the boiled drumstick pieces to the gravy and mix it well.Cook for few minutes so that the masala mixes well with the drumstick and serve with steaming rice with ghee drizzled on top.
                                    
                                     
       

Little Words

  • Adjust the consistency of the gravy as desired.
  • Instead of onion tomato paste you can fnely chop onion and tomatoes and saute them and add coconut paste.
  • Tastes good with steaming rice.The taste of drumstick is distinct in this masala.
  • Coconut oil can be used for a distinct flavour.

Dal Makhani


Ingredients
Black Dal/Urid Dal       -  1/4 cup
Red Kidney Beans        -  1/4 cup
Onion                           -  1
Tomato                         -  1
Coriander Powder         - 2 tsp
Cumin                           -  1/2 tsp
Ginger garlic(crushed)   -  1 tblsp
Butter                           -  2 tsp
Chilli Powder                -  1/2 tsp
Salt                               -  to taste  
METHOD       
  • Soak the dals overnight and pressure cook for 8 to 10 whistles.
            
  • Add coriander powder,chilli powder,water and let the spices cook.Meanwhile melt butter in a frying pan and splutter cumin seed,add onion, ginger garlic and fry till raw smell goes off.Add tomato and saute till they become mushy.
       
  • Add this to the cooked dal and add little more butter and serve hot with rice.
