Pink Lemonade

Ingredients

Raspberry    - 3/4 cup
Lemon Juice - 1/2 cup
Sugar           - 1/2 cup

Method

  • Puree the raspberries and strain in a sieve or filter with fine mesh.
               
       
  • Meanwhile add 2 cups of water to sugar and heat until sugar dissolves.Let it cool.
       
  • Once sugar solution has cooled combine raspberry puree,sugar solution and lemon juice and adjust water as desired and serve.

  • Serve chilled or with ice cubes and mint leaves.

Cauliflower Curry

Ingredients

Cauliflower      - 400g
Beans              - 100g
Tomato            - 2
Onion              - 1
Curry Leaves   - few
Garlic               - 2
Ginger              -1"piece
Green Chilli      - 1
Yoghurt            - 1/4 cup
Rice Flour         - 1/2 tsp
Pepper Powder - to taste
Lemon juice      - 1 tblsp
Salt                   - to taste
Oil                    - 2 tsp

Method

  • Boil a large pan of salted water and add the cauliflower florets for five minutes and drain.Cook the beans in boiling water until soft.
       
  • Heat oil in a pan,add onions,curry leaves,chilli,chopped garlic,grated ginger and saute for a while and add the tomatoes.
       
  • Now add turmeric powder,cauliflower,beans and little salt.
       
  • Crush in some fresh pepper powder and switch off the flame.Mix the rice flour with yogurt and add to the vegetables.Add some more pepper if desired.Squeeze in lemon juice and serve hot with rice.

Cabbage Channa Biriyani

Ingredients

Rice                     - 1 cup
Chickpeas            - 1/2 cup(soaked previously & pressure cooked)
Cabbage               - 1/2 cup
Onion                    - 1
Tomato                  - 1
Ginger Garlic Paste - 1 tblsp
Aniseed                  - 3/4 tsp
Khus Khus             - 1/4 tsp
Clove                     - 2
Cinnamon               - 1"piece
Cardamom             - 2
Green Chilli            - 2
Chilli Powder          - 3/4 tsp
Turmeric Powder    - 1/4 tsp
Curry Powder         - 1 tsp
Coriander Leaves   - 1 tblsp
Mint Leaves            - few
Oil & Ghee             - 1 tblsp
Salt                         - to taste

Method

  • Heat oil and ghee in a pressure cooker.Add aniseed,khus khus followed by cloves,cardamom,cinnamon,green chilli and onions.Then add tomatoes and turmeric powder.
        
  • Add cooked channa and chopped cabbage,mint and corinder leaves and give it a mix.
        
  • Now add chilli powder,curry powder,salt and required amount of water.Bring this to a boil and add soaked rice and simmer for eight to ten minutes and serve with raita.

Vendaikkai Pulikuzhambu

Ingredients

Lady's Finger        - 200 g
Tomato                 - 1
Coriander Powder  - 2 tsp
Curry Powder         - 1 tsp
Fried Gram Powder - 1 tblsp
Turmeric powder     - 1/4 tsp
Tamarind Paste       - 1/2 tsp
Oil                          - 1 tsp
Salt                        - to taste
To Temper
Oil                         - 2 tsp
Onion                     - 1
Curry Leaves          - few
Mustard Seeds        - to splutter
Fenugreek Seeds     - to splutter
Red Chilli                 - 3

Method

  • Add oil in a pan and add the lady's finger pieces chopped one inch long.Saute till it becomes soft.
       
  • Add the tomatoes,all the powders and water.Add tamarind paste and salt and let it cook.
             
       
  • Heat oil in another pan and do the tempering and add it to this.

Mango Vanilla Smoothie

Ingredients

Mango             - 2 (large size)
Vanilla Essence - 3/4 tsp
Cold Milk         - 1 cup

Method

  • Cut the mango along the sides of the seed and scoop the pulp with the help of a spoon.Place the mango pulp,vanilla essence and cold milk in a blender and blend it smooth.
         
  • Pour into serving glasses and serve chilled.
