| Turmeric Powder | 1/4 tsp |
| Yogurt | 1/4 cup |
| Mint Leaves | 1/4 cup |
| Coriander Leaves | 2 tblsp |
| Salt | to taste |
| Oil+Ghee | 2 tblsp |
Cooking Steps
- Heat oil and ghee in a pressure cooker,add bay leaves,cinnamon stick,cardamom pods,cloves,grated ginger,crushed garlic,green chilli,sliced onion and fry till onion becomes translucent.
- Now add tomato,turmeric powder,chilli powder and saute for a while.Add all the chopped vegetables,greens and salt.
- Now add yogurt and mix well.Then add a cup of water and bring it to a boil.Add soaked rice along with 3/4 cup of water.Check salt and cover with lid.Put on the wait and simmer for 6-8 min.
- Open the lid after pressure is released, add saffron in milk fluff with a fork gently and serve with raita or any desired side dish.
- The choice of vegetables can be varied as per individual needs.
- You can add beetroot and it gives a pink colour.
- Coconut milk can be added if desired.
- You can even garnish with cashews fried in ghee.,
