Spinach Pakoda


IngredientQuantity
Baby Spinach1 1/2 cup
Gram Flour3/4 cup
Rice Flour3/4 cup
Onion1
Chilli Powder1/2 tsp
Baking Soda/bicarb of sodaa pinch
Saltto taste
Oilto deep fry

Cooking Steps

  • Mix all the ingredients excluding oil.Sprinkle water and bind them together.Meanwhile heat oil in a kadai.
        
  • Now take a fistful and pinch them with your fingers in portions into hot oil.Fry till golden brown.

  • Serve with any sauce or chutney or just plain.
  • An easy way of incorporating greens in your kids food.
  • Equal proportion of rice flour and gram flour makes it more crunchy.
  • Just sprinkle water to hold them tight.

Kalan Kuzhi Paniyaram/Mushroom Paniyaram


IngredientQuantity
Dosa Batter2 cups
Mushroom100 g
Onion1
Turmeric Powder1/4 tsp
Chilli Powder1/2 tsp
Mustard Seeds1/4 tsp
Coriander Leaves2 tblsp
Saltto taste
Oil/gheeas per need

Cooking Steps

  • Heat two teaspoons of oil in a pan,splutter mustard seeds,add onion,saute till they turn pale.Now add chopped mushrooms.
       
  • Add turmeric powder,little salt and chilli powder and saute till mushroom is done.
       

  • Add coriander leaves and add this to the dosa batter and mix well.       

  • Heat a paniyaram pan,grease with ghee or oil and pour the batter in the moulds.Turn carefully to the other side.

  • Serve with coconut chutney or relish it as it is.
  • Use ghee or oil as desired.

Baby Corn Sabji

Baby Corn10
Onion1
Tomato1
Tomato Ketchup1 tsp
Turmeric Powder1/8 tsp
Chilli Powder1/2 tsp
Cumin Seeds1/4 tsp
Coriander Leavesto garnish
Saltto taste
Oil2 tsp

Cooking Steps

  • Cut the baby corn into lengthwise pieces and into halves and cook in a pressure pan or in microwave.
  • Heat oil in a pan,splutter cumin seeds,add onion and saute till onion turns pale.
  • Add chopped tomatoes and saute till tomato becomes mushy.Add turmeric powder and chilli powder.
       
  • Now add tomato ketchup and salt.Give it a stir and add cooked baby corn into this.Add little water and let the masala blend with the corn.Garnish with coriander leaves and serve.

Bread Halwa


IngredientQuantity
Bread 4 slices
Milk2 cups
Sugar1/4 cup
Ghee2 tblsp
Coconut Milk Powder/grated 1 tblsp
Cashewfew

Method

  • Cut the bread slices into small pieces and fry in ghee till they are golden brown.
       
  • Now add milk and the bread will absorb milk.Keep stirring in slow flame till all milk has been absorbed.This will take about fifteen minutes.Add coconut milk powder or fresh grated coconut.
            
  • Add sugar,stir well and finally add cashews fried in ghee.

  • A simple dessert that can be prepared so easily.
  • After adding milk continue stirring to avoid burning of  milk.
  • Fry the coconut in ghee if using fresh grated coconut.
  • I used maggi coconut milk powder and I loved the flavour of coconut.

Lamb Biriyani/Mutton Biriyani

Lamb 1/2 kg
Basmati Rice1 1/2 cup
Saffrona few threads
Milk1/4 cup
Onion
Ginger1"piece
Garlic
Almond8
Cardamom4 pods
Cinnamon1"stick
Cloves4
Bay Leaves
Chilli Powder3/4 tsp
Turmeric Powder1/6 tsp
Cumin Powder1/2 tsp
Yogurt1/2 cup
Coriander Leaves1 tblsp
Saltto taste
Oil2 tsp
Ghee1 tblsp+1 tsp

Cooking Steps

  • Heat oil and ghee in a pressure cooker,add bay leaves,cinnamon stick,cardamom pods,cloves,grated ginger,crushed garlic,sliced onion and fry till onion becomes translucent.

  • Now add lamb meat and fry for a few minutes.Then add turmeric powder,chilli powder and cumin powder.
  • Now add yogurt and mix well.Then add half a cup of water and pressure cook for two whistles.
      
  • Now add saffron to warm milk and set aside.Meanwhile blanch almonds.Now open the pressure cooker and add soaked rice and saffron milk and salt.Add two and a half cups of water.Close the lid and simmer for ten minutes.
      
  • Slightly toast the almonds in remaining ghee and garnish with coriander leaves.Fluff up the rice with a fork and serve.

  • Lamb meat takes more time to cook.Pressure cooking makes it easier.
  • Adjust water accordingly.
  • Instead of blanching,soak the almonds for half an hour in warm water and then peel off the skin with your fingers.

Spicy Sweet Corn

Sweet Corn1 cup

Chilli Powder1/4 tsp
Carrot1(grated)
Pepper Powder1/4 tsp
Cheese1 tblsp(optional)
Butter1 tsp
Coriander Leaves1 tblsp
Lime Juice2 tsp
Saltto taste

Cooking Steps

  • Boil water in a vessel and add sweet corn and once cooked drain excess water.Add all the ingredients one by one and serve.

  • An easy to make recipe.
  • Chaat masala can be added if desired.
  • Cheese is purely optional.
  • Salad tomatoes are good for this one.
